I also tell my Italian amici, friends, that us Americans interchange pasta and think pasta is pasta but we have a lot to learn from the Italians, Sicilians especially. I am slowing learning what pasta should be served with what sauce and how to prepare the pasta. Sicilians make the best pasta dishes and they are prepared so simply, mostly with fresh spices and a little salt and a little pepper. In Italy, it’s popular to serve this soup with a dash of extra virigin olive oil and some grated parmigiano. Of course, Italian parmigiano isn’t vegetarian so vegans and vegetarians will want to leave it out or use a vegetarian or vegan cheese. Add grated parmigiano or vegetarian parmesan if desired. What to do with leftovers. In a sauce pot add 3 tablespoons of extra virgin olive oil, the chopped onion and the chopped garlic. Sometimes, recipes call for garlic in the soffrito as well, although in general onions and garlic aren’t used together. Southern Italian tomato sauce is normally made without soffrito. Instead, they use tomatoes, garlic and basil.

If you are making enough of this Tuscan kale, white bean and pasta soup to have a lot of leftovers, I suggest cooking the pasta separately and adding it to individual bowls when serving. You can store any leftover pasta and soup separately in the fridge for about 3 says or freeze the soup without pasta for up to 3 months. Let me know what you think. Just sauté the soffrito, then add tomato passata or chopped peeled tomatoes and salt and pepper to taste. Simmer for 15-20 minutes and then take it off the heat and mix in the ricotta. I kept aside some ricotta to add to the plates before serving. Step 4 Cook the vegetables. Wash and cut the eggplant, zucchini and sweet peppers into cubes. The sautéed veggies. The word ‘pecora’ means sheep in Italian and alla pecorara means shepherd’s style. So, I imagine this dish got its name from the generous quantity of sheep’s ricotta and pecorino in it. Like many traditional Italian pasta recipes, anellini alla pecorara is a dish that originated in what the Italians call ‘la cucina povera’, meaning the peasant kitchen. It’s made with produce the peasants and farmers made or grew themselves. Thus, the vegetables they grew, the cheese they produced and the pasta they made themselves! Add tomato passata or chopped tomatoes to soffrito. Season, stir and simmer. How to make the pecorara sauce. The vegetables are cut into cubes and sautéed with olive oil and garlic. Once the vegetables are cooked, you can add them to the tomato sauce or add them to the pasta after mixing it with the tomato and ricotta sauce, which is what I did. Cook the vegetables until they are soft and slightly browned. Finish and serve. The anelletti pasta, little round circle pasta, is to be baked ONLY with a ragu sauce. This pasta is a baked anelletti pasta dish. You would not serve anelleti like you serve spaghetti, boiled to al dente and then served with a marinara sauce. Anelletti is to be baked in the forno or oven. So you could call this Forno Anelletti.

Anolini is a pasta that hails from the region of Parma in northern Italy. These are small circular ravioli that are stuffed with a slow-cooked beef filling. There is a brass tool or stamp that is often used to cut the filled pasta into perfectly round shapes. Drain the pasta and add it to the tomato sauce and mix well. Then plate and add some sautéed vegetables, fresh basil leaves, extra ricotta and grated pecorino if using. As I mentione above Italian pecorino isn't vegetarian so you can leave it out or use vegetarian parmesan. Let me know what you think. Ribollita doesn’t contain pasta. It has potatoes and bread instead. This simpler Tuscan kale and white bean soup has pasta. However, you can also find versions of this recipe with potatoes as well. Step 6 Add the cooked beans to the pot. The pasta in Tuscan Kale and cannellini soup. Anellini al Forno - Baked Anellini, a classic dish from Sicily perfect to make for your Sunday dinner, holidays or special occasion. The filling starts with lean beef that is simmered with onions, celery, and carrots for an entire day. The braised meat is then finely minced and combined with breadcrumbs, parmesan cheese, an egg, and a couple of ladles of the broth from the simmering pot.

In and around the Parma area of Emilia-Romagna, this classic dish is prepared by families to enjoy on special holidays, such as Easter and Christmas. The process for making anolini requires a couple of days of attentive and loving preparation. In Italian, the word anello means ring. Hence, anellini are pasta rings. However, in most recipes for anelli, anelletti or anellini the pasta is dried rings of various sizes. This is the pasta that people outside of Italy associate with Campbell’s spaghetti Os or Heinz spaghetti hoops! It’s considered a traditional pasta variety in Sicily, where they use it in a baked pasta dish called anelletti al forno or timballo di anelletti. Italians also use pasta rings in soups and salads. Step 1 Make the anellini pasta ringsMaking the rings isn’t too difficult. Step 3 Sauté onions, garlic, carrots and celery in olive oil until soft. Tuscan Kale. According to tradition, ribollita was prepared on Fridays with all the leftover vegetables of the week cooked together with stale bread. Originally, ribollita wasn’t a vegetarian dish and contained pancetta or pork rind. Nowadays, most people make it without meat. Step 5 Add washed and chopped kale to pot and cook until the kale wilts. This recipe makes enough for 2 generous portions of gluten free spaghetti hoops to have on toast (as a side dish they’ll go a bit further). If you need more or less simply double or halve the recipe. They are naturally gluten and dairy free, plus vegan too. The best-known Tuscan dish with kale and white beans is a very hearty soup called Ribollita. That Tuscan recipe is really a great example of the typical recycling cuisine of past peasant populations.

Many traditional dishes come from a time when poverty was the culinary mother of invention! The peasant and rural population made tasty, nutritious and filling meals from what was available and what they cultivated themselves without spending much money. Step 1 Gather your ingredients. So, anellini alla pecorara is a dish of a particular type of pasta and sauce eaten together. In Abruzzo, you can find fresh anellini to buy in many food stores. Interestingly, the pasta is sold as anellini alla pecorara or pecorara di Elice. Although, many locals still make this pasta themselves. Outside of the region, the only way to enjoy this dish in its authentic form is to use homemade pasta, which is what we did. What is anellini pasta? The Sicilians love their pasta! Each pasta has its own special sauce whether ragu – meat and tomato sauce, or marinara or besciamella – a white sauce. Each pasta has its own way of cooking or preparing and you don’t want to interchange or mix up the way you prepare your pasta dish! Baked anelletti is no exception. Cook the Anellini pasta in salted water for about 10 minutes, once done, blanch the pasta and set aside.
